- 1 (14.5 oz) can diced tomatoes, with juice
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 cups fresh baby spinach or kale
- 9 oz (about 2 cups) cheese tortellini (fresh or frozen)
- Grated Parmesan cheese for garnish (optional but delicious)

1. Sautรฉ the Aromatics
In a large soup pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sautรฉ for 5โ7 minutes, until vegetables begin to soften.
