This is a layered dish where texture and flavor work together.
Step 1: Prepare the Potatoes
Place cubed potatoes in a large pot.
Cover with cold salted water.
Return to pot and let steam dry for 2–3 minutes.
This removes excess moisture for fluffier mash.
Season with salt and white pepper.
Set aside.
Step 2: Build the Aromatic Base
Heat olive oil and butter in large skillet over medium heat.
Add onions, carrots, and celery.
Cook 6–8 minutes until softened.
Add mushrooms.
