Tuscan Garlic Chicken with Spinach

Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon dried Italian seasoning
1/2 teaspoon red pepper flakes (optional, for a kick)
1/2 cup sun-dried tomatoes, drained and chopped
2 cups fresh spinach
Salt and pepper, to taste
Fresh parsley, chopped, for garnish

1. Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
2. Make the Garlic Cream Sauce:
In the same skillet, reduce the heat to medium and add 2 tablespoons of butter. Once melted, add the minced garlic and sautΓ© for about 30 seconds, until fragrant.
Pour in the chicken broth and scrape up any brown bits from the bottom of the skillet. Let it simmer for 2-3 minutes to reduce slightly.
